مادربزرگ

The مادربزرگ is the kitchen's gravitational center in many Iranian families. "Grandmother's recipe" (دستور مادربزرگ, dastur-e mâdar-bozorg) is a real category of Iranian cooking, and refers to the slow, layered, time-consuming dishes that no recipe book gets exactly right: the stews where you add the lime peel at the right moment, the rice where the tahdig sets just so, the jams she made every September from the fruit you brought her. Many Iranians abroad describe the loss of their grandmother specifically as the loss of those flavors.
