Here’s a faloodeh recipe that’s been passed around Iranian kitchens for. and I’m not exaggerating. roughly two thousand years. Faloodeh (فالوده) is frozen rosewater with thin vermicelli noodles and lime juice. It sounds weird until you taste it, and then it sounds like the most obvious thing in the world. Pair it with bastani sonnati (بستنی سنتی), Iran’s saffron-and-pistachio ice cream, and you’ve got a dessert combination that makes gelato look like it’s trying too hard.

I say this as someone who lives in Milan, surrounded by arguably the best gelato on the planet. And still. bastani sonnati hits different. It’s the saffron. It’s the frozen cream chunks. It’s the rosewater that ties everything to a specific place and memory.

These two desserts are Iran’s summer. Every street corner, every park, every family gathering from June to September. faloodeh and bastani are there. And they’re also a surprisingly good Farsi lesson, if you pay attention to the verbs.

Faloodeh Recipe. Dastoor-e Tahhiyeh-ye Faloodeh (دستور تهیه فالوده)

Step 1:
شکر و آب رو توی یه قابلمه بریز و بذار بجوشه تا شربت درست بشه.
Shekar va aab ro tuye ye qaablameh beriz va bezaar bejoosheh taa sharbat dorost besheh.
Pour sugar and water into a pot and let it boil until it becomes syrup.

Step 2:
گلاب رو اضافه کن و مخلوط کن.
Golaab ro ezaafeh kon va makhloot kon.
Add rosewater and mix.

Step 3:
رشته‌ها رو بپز و آبشون رو بگیر.
Reshteh-haa ro bepaz va aabeshoon ro begir.
Cook the noodles and drain them.

Step 4:
رشته‌ها رو بریز توی شربت سرد شده.
Reshteh-haa ro beriz tuye sharbat-e sard shodeh.
Pour the noodles into the cooled syrup.

Step 5:
همه رو بریز توی ظرف و بذار توی فریزر یخ بزنه.
Hameh ro beriz tuye zarf va bezaar tuye frizer yakh bezaneh.
Pour everything into a container and let it freeze.

Step 6:
هر نیم ساعت در بیار و هم بزن تا یکدست بشه.
Har nim saa’at dar biyaar va ham bezan taa yekdast besheh.
Every half hour, take it out and stir until it’s uniform.

Step 7:
موقع سرو کردن، آب لیمو بریز روش.
Moghe’-e serv kardan, aab-e limoo beriz roosh.
When serving, pour lime juice on top.

The texture should be icy and granular. not smooth like gelato. The noodles should be slightly chewy inside the ice. And the lime juice at the end is non-negotiable. It cuts through the sweetness and makes the whole thing sing.

Bastani Sonnati Recipe. The Saffron Ice Cream

The Method

Step 1:
زعفران رو دم کن با دو قاشق آب داغ.
Za’feraan ro dam kon baa do qaashoq aab-e daagh.
Steep the saffron with two spoons of hot water.

Step 2:
شیر، خامه و شکر رو مخلوط کن و بذار گرم بشه.
Shir, khaameh va shekar ro makhloot kon va bezaar garm besheh.
Mix milk, cream, and sugar and let it warm.

Step 3:
سحلب و گلاب و زعفران دم‌کرده رو اضافه کن.
Sahlab va golaab va za’feraan-e dam-kardeh ro ezaafeh kon.
Add the salep, rosewater, and steeped saffron.

بذار سرد بشه و بعد بریز توی فریزر.
Bezaar sard besheh va ba’d beriz tuye frizer.
Let it cool and then pour into the freezer.

Step 5:
هر یه ساعت در بیار، هم بزن و پسته خرد شده اضافه کن.
Har ye saa’at dar biyaar, ham bezan va pesteh-ye khord shodeh ezaafeh kon.
Every hour, take it out, stir, and add crushed pistachios.

Step 6:
بذار کامل یخ بزنه.
Bezaar kaamel yakh bezaneh.
Let it freeze completely.

The secret ingredient is sahlab. orchid root powder that gives bastani its stretchy, almost chewy texture. It’s what makes Iranian ice cream different from every other ice cream on earth. If you can’t find sahlab, some people substitute cornstarch, but it’s not the same. Not even close.

Two new compound verbs here worth memorizing: yakh zadan (freeze) and dam kardan (steep/brew). Both are incredibly common in daily Farsi, not just cooking. “Yakh zadam” can mean “I froze” as in “I was so cold.” And “chai ro dam kardam” is something you’ll say. or hear. every single day in an Iranian household.

The Bastani-Forushi Culture

A bastani-forushi (بستنی‌فروشی) is an ice cream shop. literally “ice-cream-selling-place.” The suffix -forushi comes from forookhtan (to sell), and it attaches to whatever’s being sold: naan-vaayi (bakery), qassaabi (butcher), bastani-forushi (ice cream shop).

Iranian bastani-forushi culture is its own world. In summer, these shops are packed from afternoon to midnight. Families, couples, groups of friends. everyone’s there. The classic order is bastani sonnati served between two thin wafer cookies, almost like an ice cream sandwich. Some shops add a drizzle of carrot juice (yes, carrot juice. it works, trust me).

And then there’s the bastani-noon-khaamei combo: saffron ice cream stuffed inside a cream puff. It’s absurd. It’s too much. It’s perfect.

Shiraz: The Faloodeh Capital

If you ever travel to Iran, you need to go to Shiraz. Not just for Persepolis and the poetry tombs. but for the faloodeh. Shirazi faloodeh is considered the gold standard. Thinner noodles, more rosewater, served with a generous squeeze of lime and sometimes a scoop of bastani on top.

The city is so associated with faloodeh that the full name of the dish is often “faloodeh Shirazi.” Every other city’s version is measured against Shiraz’s. It’s like pizza and Naples. you can make it elsewhere, but everyone knows where the real thing lives.

The word golaab is beautiful in its simplicity: gol (flower/rose) + aab (water) = rosewater. Farsi is full of these transparent compound words where the meaning is right there on the surface. What does faloodeh taste like?

Can I make faloodeh without rosewater?

Technically yes, but it won’t taste like faloodeh. Rosewater is the defining flavor. You could substitute orange blossom water for a different but still authentically Middle Eastern twist.
