You hear نوش جان three ways: from the cook as a blessing when serving, from a guest replying after a compliment about the food, and from anyone walking past someone eating (even a stranger on a park bench). It's especially common from older women toward children: "بخور عزیزم، نوش جان" ("Eat my dear, nush-e jân"). Refusing food after this blessing feels almost rude.
