The metaphor extends beyond loyalty. نمک (namak) also means charm, especially the charm of a person who has wit and presence at a table. To say someone is نمکین (namakin), "salty," is a high compliment in Persian: it means they have grace, they're funny, their company seasons the room. A boring person, by contrast, is بی‌نمک (bi-namak), "saltless," flat and forgettable. Iranian comedians, hosts, and storytellers are praised for their namak. Salt also haunts mourning: at funerals and especially at the چله (chelle, fortieth-day memorial), the meal served must be salted carefully, since salt represents the bond between the dead and the living that food makes visible. The salt shaker on the table, نمکدان (namakdân) in formal Persian or نمکدون (namakdun) in spoken, is one of the few objects that travels with the family across centuries of changing kitchens.
