What it means
تابه چدن (tâbe-ye chodan) means a cast-iron pan, a heavy flat-bottomed skillet made from cast iron, valued for its heat retention and durability. The word تابه (tâbe) is native Persian and has long meant a flat pan used for frying or baking, including items like bread and eggs. The word چدن (chodan), meaning cast iron, entered Persian from Russian “chugun” (чугун), which itself was borrowed from Turkic. Together the phrase names a specific and increasingly popular piece of cookware. The simpler term تابه (tâbe) alone is used for any frying pan, while تابه چدن specifies the material.
How to use it
- تابه چدن رو روی اجاق داغ کن. (tâbe-ye chodan ro ru-ye ejâq dâgh kon.) “Heat the cast-iron pan on the stove.”
- با تابه چدن کباب درست کردم. (bâ tâbe-ye chodan kabâb dorost kardam.) “I made kebab with the cast-iron pan.”
- تابه چدن سنگینه ولی خیلی خوب حرارت نگه میداره. (tâbe-ye chodan sangin-e vali kheili khub harârat negah midâre.) “The cast-iron pan is heavy but holds heat very well.”
- بعد از شستن تابه چدن رو کامل خشک کن. (ba’d az shostan tâbe-ye chodan ro kâmel khoshk kon.) “After washing, dry the cast-iron pan completely.”
Cultural note
Traditional Iranian cooking favored thin aluminum pans for quick stovetop work, but cast-iron pans have grown in popularity as home cooks seek alternatives that can move from stovetop to oven and produce a better crust on meats and bread. Cooks preparing کباب (kabâb) on a stovetop often prefer the تابه چدن for the even high heat it provides. Care instructions matter, since cast iron must be dried promptly and occasionally oiled to prevent rust, a point that often comes up in Persian cooking communities and food blogs as Iranian home kitchens adopt this cookware.
