What it means

رازیانه (râziyâne) is fennel, a tall herbaceous plant in the carrot family with bright green feathery leaves, hollow stems, and small yellow flowers. The name descends directly from Middle Persian râziyânak, making it one of the genuinely ancient Persian plant names. Both the fronds and the seeds are edible and used in Persian cooking. The seeds in particular carry a clean, sweet anise fragrance that is unmistakable in the kitchen. Do not confuse رازیانه with شوید (shovid, dill), which has a similar appearance but a distinctly different flavor.

How to use it

  • دانه رازیانه داری؟ (dâne-ye râziyâne dâri?) “Do you have fennel seeds?”
  • رازیانه خوبه برای معده. (râziyâne khube barâye ma’de.) “Fennel is good for the stomach.”
  • با رازیانه ماهی درست کردم. (bâ râziyâne mâhi dorost kardam.) “I made fish with fennel.”
  • بوی رازیانه تو آشپزخونه پیچیده. (bu-ye râziyâne tu âshpazkhune pichide.) “The smell of fennel has spread through the kitchen.”

Cultural note

Fennel seeds have been used in Iranian herbal medicine (طب سنتی, tebb-e sonnati) for centuries, prized for aiding digestion and reducing bloating. Ground fennel seed is a component in some regional spice blends, and fennel tea is a common home remedy for stomach discomfort. The plant grows wild in many parts of Iran, particularly in the north and northwest, where it is gathered fresh in spring.
