What it means
رازیانه (râziyâne) is fennel, a tall herbaceous plant in the carrot family with bright green feathery leaves, hollow stems, and small yellow flowers. The name descends directly from Middle Persian râziyânak, making it one of the genuinely ancient Persian plant names. Both the fronds and the seeds are edible and used in Persian cooking. The seeds in particular carry a clean, sweet anise fragrance that is unmistakable in the kitchen. Do not confuse رازیانه with شوید (shovid, dill), which has a similar appearance but a distinctly different flavor.

The plant grows wild in many parts of Iran, particularly in the north and northwest, where it is gathered fresh in spring.
