نارنجی

Nâranj trees grow across northern Iran, in Mazandaran and Gilan especially, where their blossoms (بهار نارنج, bahâr-nâranj) are harvested for orange-blossom water, a key flavoring in Persian sweets and sharbats. The bitter orange itself is rarely eaten raw but appears in stews like خورشت فسنجان (khoresht-e fesenjân) where its juice cuts the sweetness of pomegranate.
