What it means
کشاورز (keshavarz) is the Persian word for farmer, the person whose work is cultivation. It is one of the foundational occupational nouns in modern Persian and the standard word used in government, news, and academic contexts. The Ministry of Agriculture is وزارت کشاورزی (vezarat-e keshavarzi). The agricultural sector is بخش کشاورزی (bakhsh-e keshavarzi). A farmer is a keshavarz.
The older, more common word is دهقان (dehqan), which literally means villager and historically meant landed peasant or yeoman farmer with deep cultural weight in classical Persian and the Shahnameh. Keshavarz is the cleaner modern term, neutral, suitable for paperwork. Dehqan carries the romance. Both are still in use; keshavarz is more frequent in official Persian.
How it works in daily life
Iran is more agricultural than its image suggests. The country produces nearly all its own wheat in good years, leads the world in saffron and pistachios, grows enough rice in Gilan and Mazandaran to flood the bazaars, and ranks high globally in pomegranates, dates, and watermelons. Behind every kilogram of this is a keshavarz, often working land that has been in the family for generations.
The trade is under pressure. Water is the binding constraint. Iran’s aquifers are dropping, the climate is drying, the dams are not refilling. A keshavarz in Yazd or Kerman today is fighting a slow war against a vanishing water table, and many are losing. Younger keshavarz are leaving the land for cities. The older ones stay, partly out of love, partly because there is nowhere else.

Where it comes from
The word is pure Persian, built from کشت (kesht, cultivation, planting, from کاشتن, kashtan, to plant) and the suffix ورز (varz, related to ورزیدن, varzidan, to practice or exercise an activity). The same suffix gives Persian کشاورز, ورزش (varzesh, exercise), and several other practice nouns. Together: one who practices cultivation. The construction is clean and the etymology is transparent to any native speaker who slows down and looks at it.

If you only learn the city words for Iranian life, you miss most of the country. Keshavarz is a word that carries weight. The Iranian plateau has been farmed for nine thousand years. The man who feeds the country deserves the title.
