What it means

هاون (hâvan) is a mortar, the heavy bowl made of stone, ceramic, or cast metal in which spices, seeds, and herbs are ground with a pestle called دسته هاون (daste-ye hâvan), literally the handle of the mortar. The word is inherited directly from Middle Persian hāwan, meaning mortar, and is native to the Persian language tradition. Arabic borrowed its own هَاوُن (hāwun) from this same Middle Persian form, rather than the other way around. In modern Iranian kitchens you will find stone mortars alongside electric grinders, but the هاون remains the preferred tool for spices where texture and aroma matter.

Cultural note

The هاون is one of the oldest kitchen tools still in daily use across Iran. In many households, especially in regions known for spice-heavy cooking such as the Persian Gulf provinces and Khorasan, a heavy stone mortar is passed down through generations. Freshly ground spice blends, called ادویه (adviye), lose their volatile oils quickly once ground, so grinding just before cooking is strongly preferred. The rhythmic sound of the mortar and pestle is strongly associated with traditional home cooking in Persian cultural memory.
