Iranian bread is its own institution. The four main types are sangak (long, baked on hot pebbles, the most loved), barbari (thicker, oval, popular for breakfast), lavash (thin, flexible, used for wraps), and taftoon (thin, round, baked on the wall of a tandoor-style oven). Each has a dedicated kind of nanvâyi, and most neighborhoods have at least one of each within walking distance. A family will often buy lavash from one bakery in the morning and sangak from another for dinner.
