What it means
چفچه (châfche) means a ladle, the long-handled spoon used for scooping and serving soups, stews, and liquid dishes. The word is closely related to چمچه (chamche), which is the more widely used form in standard modern Persian and also means a spoon or ladle. Both variants trace back to the Turkic root çömçe, meaning a ladle or large spoon. In everyday spoken Persian, چفچه tends to refer specifically to the large ladle used for soups like آش (ash), while قاشق (qâshoq) covers ordinary eating spoons. You will hear both چفچه and چمچه depending on regional usage and family habit.
How to use it
- چفچه رو بده بهم که آش رو بکشم. (Châfche ro bede beham ke ash ro bekesham.) “Give me the ladle so I can serve the soup.”
- آش رو با چفچه هم زدم که ته نگیره. (Ash ro bâ châfche ham zadam ke tah nagire.) “I stirred the soup with the ladle so it would not stick to the bottom.”
- چفچه بزرگه رو بیار، این کوچیکه کافی نیست. (Châfche-ye bozorge ro biâr, in kuchike kâfi nist.) “Bring the large ladle, this small one is not enough.”
- یه چفچه پر از آبگوشت بریز تو کاسهام. (Ye châfche por az âbgusht beriz tu kâse-am.) “Pour a full ladle of broth into my bowl.”

The ladle holds a place of quiet importance in Iranian cooking culture because so much of the cuisine centers on slow-cooked, liquid-rich dishes: ash-e reshteh, abgoosht, ghormeh sabzi, fesenjan, and countless regional soups. Serving from a communal pot with a ladle is a gesture of hospitality and care.
