What it means

شنبلیله (shambalile) is fenugreek, a small annual plant whose dried leaves and seeds are both used as a flavoring. The word has a remarkable lineage: it descends from Middle Persian šambalīdag, which in turn corresponds to the Akkadian form šambaliltum, meaning roughly mixture grass. However, linguists note that the word structure is not Semitic and the Akkadian form itself was likely borrowed from an unknown earlier source. Arabic uses a completely different word for fenugreek, حلبه (halba), so شنبلیله is not an Arabic borrowing. Its bitter, slightly maple-like aroma is distinctive, and both the seeds (دانه شنبلیله, dâne-ye shambalile) and the dried leaves are used in Persian food and herbal medicine.

How to use it

  • شنبلیله خشک داری؟ (shambalile-ye khoshk dâri?) “Do you have dried fenugreek?”
  • توی قرمه‌سبزی شنبلیله میریزن. (tu-ye ghorme sabzi shambalile mirizan.) “They put fenugreek in ghormeh sabzi.”
  • بوی شنبلیله خیلی قویه. (bu-ye shambalile kheyli qaviye.) “The smell of fenugreek is very strong.”
  • شنبلیله برای دیابت مفیده. (shambalile barâye diâbet mofide.) “Fenugreek is beneficial for diabetes.”

Cultural note

Fenugreek is one of the defining flavors of قرمه‌سبزی (ghormeh sabzi), Iran’s national herb stew, where dried شنبلیله leaves contribute a pronounced bitter note that balances the richness of the dish. The seeds are also used in some regional bread recipes and herbal preparations. In traditional Persian medicine, شنبلیله has long been prescribed for blood sugar management and as a galactagogue for nursing mothers, and modern research has explored some of these folk uses.
